Slow Roasted Honey Dijon Salmon with Pecans-Feta-Arugula

Ingredients:
6oz salmon filet
2 tbsp Dijon Mustard
2 tbsp Honey Drizzle of Olive Oil
Crumble:
1/2 cup Pecans chopped
3 large dates chopped small
3 tbsp Feta Cheese
Handful of Arugula
Pinch of Redmond Real Salt
Dash of Pepper
1 tsp Red Pepper Flakes (optional if you don’t like the heat)
Directions:
- Preheat the oven to 275 degrees.
- Line a baking sheet with tin foil
- Make the crumble by chopping up the pecans, dates, arugula, combined adding in the Feta.
- Make the mustard mixture by adding the mustard, honey, and a pinch of salt (optional) to a small bowl and mix to combine.
- Place the lemon slices on a tin foil lined baking sheet.
- Then place the salmon on top of the lemons.
- Brush on the mustard/honey mixture.
- Next, add the crumble, spreading it evenly over the top of the salmon.
- Drizzle the salmon with olive oil.
- Place the salmon in the oven uncovered for 30-35 minutes.
